Delightfully Simple Butternut Squash Soup

The weather has been all over the place here in Los Angeles.  Some days are unusually hot, and the next I'm looking for my warmest sweater.  We have mild winters compared to what I grew up with on the east coast, although this kind of weather really messes with your immune system.

On those cooler days nothing beats a savory bowl of delicious soup.  I've shared recipes for soup before like the Creamy Garlic & Dill Mung Bean Soup, yet today's simple organic recipe is for Butternut Squash Soup.  This recipe was a hit for my one year old son and my hubby.  There is no age discrimination with this one!

What you will need...

  • 1 organic butternut squash peeled, seeded, and cubed

  • 3 cups of organic sweet potatoes cubed

  • 1 cup of organic yellow onion chopped

  • 3 cups of organic carrots chopped

  • 3 cups of loosely packed organic spinach

  • 6 tbsp butter or oil of your choice

  • 2 cups of purified/spring water (vegetable broth optional)

Once all of the dry ingredients are prepped, allow them to simmer in a large pot with butter or oil until softened a bit on medium heat for around 10-15 minutes or more stirring frequently.  Finally add your water or broth and simmer for an hour.  Once fully cooked, blend with a stick blender until smooth.  Serve with your favorite bread or salad and enjoy!
